How to Cook a Whole Pig

The roasting box is a wooden box lined with metal. The pig is placed inside the box and a metal cover is placed on top. Charcoal is then placed on top of the metal cover and once lit creates the slow heat of an outdoor oven.

This is a great technique that utilizes indirect heat it involves digging a pig-sized hole in the ground, lining it with rocks, building a fire on top which then burns down heating the rocks.
Then those hot rocks are covered with banana leaves. The pig goes on the leaves then the whole lot (plus some veggies) is covered with more leaves then the dirt from the hole is shoveled over burying the lot. This is the Luau way.
